Collusion Tap Works is the beating heart of Royal Square's beer scene, a family-founded urban brewpub that's been brewing in downtown York since 2017. Twenty-four taps pour a rotating spread of beer, cider, and cocktails, but the real flex is the barrel-aging and sour-blending program — the kind of operation that drops exclusive new releases nearly every week and keeps regulars checking the board like it's the stock market. The kitchen keeps up with seasonal, locally sourced plates; do not skip the fried pickles. It's everybody-knows-everybody energy without the clubby gatekeeping — walk in a stranger, leave with a favorite bartender. And if the room next door is roaring, that's the Side Show, Collusion's event space under the same roof with its own entrance. Grab a flight, post up, and let the beer nerds pull you deeper into the good stuff.
