A speakeasy-style cocktail bar sitting under 30 North Queen, and the only tell is a small Proof sign over a metal staircase heading below the sidewalk. Down there it's rustic stone walls against sleek modern furniture — a basement that drinks way above its station. The cocktails take swings and land them: the South Frog runs gin with tomato, basil, parmesan vermouth, and pepper oil. LNP's bar writers said the food alone is worth the trip even if you're not drinking cocktails, which is about the highest compliment a bar kitchen gets. Walk slow on Queen Street or you'll blow right past the sign.

Another October evening, another round of live jazz from Carl Zeplin & Tim Gross down in the vault at Proof, 6 to 9 PM. This basement bar under 30 N Queen St used to be a bank vault and, more recently, a fitness studio — now it's stone walls, sleek furniture, and a bar stocked with more than 500 spirits, whiskey especially, sourced as far as Ireland and Japan. LNP's bar critics gave the kitchen a rare compliment: worth the visit on food alone. Come for a duo set that fits the room's late-night, low-lit energy, order a classic or the house South Frog (gin, tomato, basil, parmesan vermouth, pepper oil), and settle into the kind of night that doesn't announce itself from the street. No cover — just find the stairs and head down.
