Eighty seats, one staircase down from the sidewalk near Central Market, and a former bank vault doing its best impression of Lancaster's best-kept secret — that's Proof, and singer/guitarist Jerry Lee Watkins takes the room tonight, 6 to 9 PM. It's built as a pre- or post-dinner stop rather than a full sit-down meal, though the charcuterie and oysters make a solid case for staying put. Watkins' guitar and vocals fill the space easily; find a seat at the bar or duck into the semi-private nook past the brick archway if you want a little more cover. The bottle list runs past 500 deep, whiskey-forward with rare Irish and Japanese pours mixed in among 2-oz pours in the $10-$20 range (the 25-year Dalmore will run you $250, for the curious). Or skip the whiskey and order the South Frog — gin, tomato, basil, parmesan vermouth, pepper oil. No cover tonight, just good live music and a room worth finding.
